Ingredients
  • 2 lbs small eggplant
  • 1/4 cup lemon juice
  • 1/4 cup sesame tahini
  • 2 tbsps plain, low-fat yoghurt
  • 2 garlic cloves, cut in half
  • salt to taste
  • extra virgin olive oil (garnish)
  • chopped parsley (garnish)
Directions

Tasting Notes: Eggplant is always a lovely vegetable to pair with Pinot noir. The smokiness of this recipe contrasts with the bright red fruits in the Pinot noir and the smokiness brings more of the earthy components of the Pinot to the surface.

Serena's Tips: We made this for the spring 2023 release party. Definitely make sure to pierce your eggplant. It's much easier on the grill versus the oven but we've also done it using the broiler and that works well too. We've used small globe eggplants and Japanese eggplants and both work well.
