Ingredients
  • 2 bone-in pork chops
  • 1 tsp coarse kosher salt
  • 1 lemon
  • 2 garlic cloves, minced
  • 2 tbsps chopped rosemary
  • large pinch of red pepper flakes
  • 1/2 tsp fennel seeds, lightly crushed
  • 2 tbsps chopped fennel frawns
  • 2 tbsps olive oil
Directions

Tasting Notes: Rosemary and fennel are always delicious with pork and the combination of the three are equally delicious with this Pinot. The rosemary and fennel contrast nicely with the bright red fruit. the pork brings out the earthy character of the Pinot.

Serena's Tips: I go light on the fennel fronds as it can be an overwhelming flavor.
