Ingredients
- 1 lb halibut fillet, cut into cubes
- 1/4 tsp fine salt & black pepper, to taste
- 4 tbsps extra-virgin olive oil
- 1 sprig rosemary
- 1/2 tsp dried mint
- 2 garlic cloves
- lemon juice, to taste
- chopped mint, for garnish
Directions
Tasting notes: The rich texture of the halibut and olive oil plays really well with the Transverse.
Serena's tips: The quality of your olive oil is really important in this dish. And if mint isn't your favorite flavor, use basil instead.
