  • 1/4 cup mirin
  • 1/4 cup sake
  • 3 tbsps white or yellow miso paste
  • 1 tbsp sugar
  • 2 tsps dark sesame oil
  • 4 salmon, trout, arctic char, mahi mahi, or black cod fillets

Tasting Notes: This is a fun dish to pair with Riesling as a ying and yang element comes out. The richness of the fish and the sweetness of the roasted miso marinade play well with the dryness and citrus elements in the Riesling.

Serena's Tips: Definitely be careful of how much marinade you leave on the fish. Too much and you end up with a sticky black char. This is a versatile dish in that you could also pair it with Pinot if you have a really nice, rich, fatty piece of salmon.
