Kimchi Chicken Lettuce Wraps

			Ingredients
			- 1 1/2 cups tightly packed homemade or store-bought kimchi
- 2 tbsps canola or vegetable oil
- 1 lb ground chicken
- salt & pepper
- 3 tbsps hoisin sauce
- lettuce leaves
- 4 cups warm cooked short-grain rice
Directions
			Tasting notes: This is a fun dish that can be done over noodles instead of rice, if that is your preference. The acidity in the Riesling balances the sweetness of the Hoisin sauce.
Serena's tips: In summer we do this as a salad over chilled rice or egg noodles. Make sure the hoisin is to your sweetness level, we use less than recommended. You can substitue pork for chicken if you prefer or your rotisserie chicken instead of ground chicken.
