Ingredients
  • 1 tsp olive oil
  • 2 1/2 cups cubed wild mushrooms
  • 1 clove of garlic, peeled and minced
  • 2 tsps salt
  • black pepper, to taste
  • 3 tbsps chopped parsley
  • 1 cup mushroom broth
  • 3 tsps lemon juice
  • 4 ozs cod fillets (total of 4 fillets)

Tasting notes: Mushrooms and Pinot are always brilliant together.

Serena's tips: Just chop the mushrooms however you want and the more variety in the mushroom leads to a more layered and interesting dish. We use vegetable broth in place of mushroom. You can sautée the garlic with the mushrooms for longer than 30 minutes to really get the garlic flavor infused with the mushrooms.
