Ingredients
- 1/2 cup olive oil
- 1/3 cup clementine or mandarin juice
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro leaves
- 1 shallot, chopped
- 2 large garlic cloves, finely grated
- 2 large Yukon gold potatoes
- kosher salt & black pepper
- red pepper flakes, to taste
- 1 1/2 lbs skin-on salmon fillet

Serena's tips: We marinated the salmon in the citrus sauce to get a little more of that flavor into it and added a bit of orange zest to the finish to enhance that flavor.
