Pairing notes: The spicy curry highlights the rich mouthfeel of the Riesling and brings out the fruit flavors while the bright acidity of the Riesling cuts through the richness of the coconut milk.
Chef's tip: When making the meatballs, we suggest searing them in a skillet before setting them aside and when you are simmering the meatballs in the curry, it takes closer to 30 minutes to cook. When doing the vegetarian version, we like to use Bobby Flay's recipe for the cauliflower which we cook while making the curry. With both the meatballs and the roasted cauliflower, we increase the apple cider vinegar to 1.5 teaspoons.
